Over the fire Herb Chicken
Get about 4 to 6 boneless skinless chicken breasts and cut into strips. Marinate for 1 or 2 days in Herb marinate(I put the strips in a ziplock bag with the marinate and squish it around once in awhile while its marinating). Get a large aluminum roasting pan and put Carrots, Potatoes and Onions in it along with the marinated chicken. Cover with Aluminum foil and place over the fire on a rack. I usually leave it on a low fire for a couple of hours. Keep stiring and checking it for doneness.
